Creamy White Chicken Chili
This recipe is for a delicious and comforting white chicken chili. It’s packed with flavor and can be easily customized to your liking.
Ingredients:
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 jalapeño pepper, seeded and finely chopped (optional)
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 5 cups low-sodium chicken broth
- 1 (15.5 ounce) can cannellini beans, rinsed and drained
- 1 (15.5 ounce) can Great Northern beans, rinsed and drained
- 1 (4 ounce) can chopped green chiles
- 1 cup heavy cream
- 1/2 cup sour cream
- Salt and freshly ground black pepper, to taste
- Chopped fresh cilantro, for garnish (optional)
Cooking Guide:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and jalapeño (if using) and cook, stirring occasionally, until softened, about 5-7 minutes.
- Add garlic, oregano, and cumin and cook, stirring constantly, for about 30 seconds until fragrant.
- Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes.
- Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add cannellini beans, Great Northern beans, and chopped green chiles.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through and beans are tender.
- Remove pot from heat and stir in heavy cream and sour cream. Season with salt and pepper to taste.
- Serve hot, garnished with chopped fresh cilantro (optional).
Tips:
- For a spicier chili: Add a pinch of cayenne pepper or red pepper flakes along with the oregano and cumin.
- Make it ahead: This chili can be easily made ahead of time. Simply prepare the chili up to step 6, then let it cool completely. Store in the refrigerator for up to 3 days. Reheat over low heat on the stovetop, adding a splash of chicken broth or water if needed to thin it out.
- Toppings: This chili is delicious with a variety of toppings. Some ideas include shredded cheese, chopped avocado, sliced green onions, sour cream, tortilla chips, or a dollop of Greek yogurt.
- Chicken: You can use cooked, shredded chicken from a rotisserie chicken to save time.
- Beans: Feel free to experiment with different types of beans, such as pinto beans, black beans, or chickpeas.
- Vegetarian option: Omit the chicken and add an extra can of beans for a vegetarian chili.
