Veggie Packed Turkey Bean Soup
This soup is hearty, flavorful, and full of protein and fiber. It’s a perfect weeknight meal that’s easy to customize with your favorite vegetables.
Ingredients:
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 (15 oz) can diced tomatoes, undrained
- 4 cups chicken broth
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup chopped green beans
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish (optional)
Cooking Guide:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
- Add garlic and cook for an additional minute, until fragrant.
- Add ground turkey and cook, breaking it up with a spoon, until browned.
- Stir in diced tomatoes, chicken broth, kidney beans, black beans, corn, green beans, bay leaf, and thyme.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
- Remove bay leaf before serving.
- Garnish with chopped fresh parsley, if desired.
Tips:
- For a thicker soup, mash some of the beans with a fork before adding them to the pot.
- This soup is easily customizable. Feel free to add other vegetables like zucchini, mushrooms, or bell peppers.
- You can also use leftover shredded turkey instead of ground turkey.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- To make this soup ahead of time, cook it according to the recipe and then let it cool completely. Store it in the refrigerator for up to 3 days. Reheat on the stovetop over medium heat until warmed through.
- This soup can also be frozen for up to 3 months. Thaw it overnight in the refrigerator before reheating.
