* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon vanilla extract
* 1/2 cup unsweetened almond milk
* 1/4 cup canola oil
* 1 tablespoon flaxseed meal (optional, for added omega-3 benefits)
* Chopped peanuts or pecans for topping (optional)
Instructions:
1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or coconut oil.
2. In a large mixing bowl, whisk together the gluten-free flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a separate bowl, combine the mashed bananas, peanut butter, maple syrup, almond milk, and canola oil. Stir until smooth.
