Recipe: Vegan Banana Bread Sour Cream

Ingredients:

* 3 large ripe bananas, mashed
* 1 1/2 cups all-purpose flour
* 1/2 cup rolled oats
* 1/2 cup brown sugar
* 1/2 cup vegan sour cream (we recommend Tofutti or Kite Hill)
* 1/2 cup canola oil
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon vanilla extract
* 1/4 teaspoon baking soda
* 2 tablespoons apple cider vinegar
* 1/4 cup chopped walnuts (optional)
* 1/4 cup dark chocolate chips (optional)

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or coconut oil.
2. In a large mixing bowl, whisk together flour, oats, brown sugar, baking powder, and salt.
3. In a separate bowl, whisk together mashed bananas, vegan sour cream, canola oil, vanilla extract, and apple cider vinegar.
