* 1 lb (450g) sweet Italian sausage, casings removed

* 3 cloves garlic, minced
* 1 cup (250ml) chopped fresh spinach
* 2 medium tomatoes, diced
* 1 cup (250g) shredded mozzarella cheese
* 1/4 cup (60g) chopped fresh parsley
* Salt and pepper, to taste
* 1/4 cup (60g) chopped prosciutto or pancetta (optional)

Instructions:

1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente, then reserve.
