Tortellini with Mushrooms

Here is a recipe for Tortellini with Mushrooms:

Tortellini with Mushrooms is a classic Italian dish that combines the delicate flavors of fresh pasta with the earthy goodness of sautéed mushrooms. This comforting and satisfying meal is perfect for a chilly evening or a special occasion. The creamy texture of the filling and the tender pasta make it a delightful treat for anyone who tries it. With the addition of fresh parsley and grated Parmesan, this dish is a true celebration of Italian cuisine.

Recipe:

Ingredients:

* 8 oz fresh cheese-filled tortellini
* 2 cups mixed mushrooms (button, cremini, shiitake), sliced
* 2 tablespoons olive oil
* 1 small onion, finely chopped
* 3 cloves garlic, minced
* 1/2 cup white wine
* 1/2 cup chicken broth
* 1 cup heavy cream
* Salt and pepper to taste
* Fresh parsley, chopped (optional)
* Grated Parmesan cheese (optional)

Instructions:

1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. In a large skillet, heat the olive oil over medium-high heat. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
3. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 3 minutes.
4. Add the white wine and chicken broth to the skillet, scraping up any browned bits from the bottom. Bring the mixture to a simmer and cook until the liquid has reduced by half, about 2 minutes.
5. Stir in the heavy cream and season with salt and pepper to taste.
6. Add the cooked tortellini to the skillet, tossing to combine with the mushroom sauce. If the sauce seems too thick, add a bit of the reserved pasta water.
7. Serve the tortellini hot, topped with chopped parsley and grated Parmesan cheese if desired.
