This recipe creates a flavorful and moist meatloaf bathed in a sweet and tangy glaze.

Ingredients:

  • 2 lbs ground beef (85% or 90% lean)
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 3 garlic cloves, minced
  • 3 Tbsp ketchup
  • 3 Tbsp fresh parsley, chopped
  • 3/4 cup panko breadcrumbs
  • 1/3 cup milk
  • 1 ½ tsp salt
  • 1 ½ tsp Italian seasoning
  • ¼ tsp ground black pepper
  • ½ tsp ground paprika
  • For the glaze:
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 Tbsp Dijon mustard

Cooking Guide:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan (around 8×4 inches).

  2. In a large skillet, cook the chopped onion over medium heat until softened and translucent. This should take about 5 minutes. Remove from heat and let cool slightly.

  3. In a large bowl, combine the ground beef, cooked onions, ketchup, parsley, panko breadcrumbs, milk, eggs, salt, Italian seasoning, black pepper, and paprika. Mix gently using your hands until just combined. Avoid overmixing.

  4. Form the meatloaf mixture into a loaf shape and place it in the prepared loaf pan.

  5. In a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard for the glaze.

  6. Bake the meatloaf for 40 minutes. Then, brush the glaze generously over the top of the meatloaf.

  7. Bake for an additional 10-15 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F. If desired, you can broil the meatloaf for 1-2 minutes for a caramelized glaze.

  8. Take out the meatloaf from the oven and let it rest for 10 minutes before slicing and serving. This allows the juices to redistribute throughout the meatloaf, making it slice cleanly.
