Thai Grilled Chicken Skewers with Peanut Sauce

For the Chicken:
- 1 ½ pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon lime juice
- 1 tablespoon minced garlic
- 1 teaspoon grated ginger
- ½ teaspoon ground cumin
- ¼ teaspoon cayenne pepper (optional)
- Vegetable oil
- Metal or bamboo skewers, soaked in water for at least 30 minutes

For the Peanut Sauce:
- ½ cup creamy peanut butter
- ¼ cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (or more to taste)
- 1 clove garlic, minced
- ¼ cup chopped fresh cilantro
Cooking Guide:
- Marinate the chicken: In a large bowl, whisk together soy sauce, brown sugar, lime juice, garlic, ginger, cumin, and cayenne pepper (if using). Add chicken and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Make the peanut sauce: In a small saucepan, whisk together peanut butter, coconut milk, soy sauce, brown sugar, lime juice, rice vinegar, sriracha, and garlic. Heat over low heat, whisking constantly, until smooth and warmed through.
- Assemble and grill: Thread chicken cubes onto soaked skewers. Preheat grill to medium-high heat. Brush chicken with oil and grill for 5-7 minutes per side, or until cooked through.
- Serve: Drizzle grilled chicken skewers with peanut sauce and garnish with chopped cilantro. Serve remaining peanut sauce on the side for dipping.
Tips:
- For extra flavor, add a tablespoon of minced lemongrass to the chicken marinade.
- If you don’t have bamboo skewers, metal skewers work just fine. Be sure to soak them in water to prevent burning on the grill.
- To test if the chicken is cooked through, cut into a piece and check that the juices run clear.
- Want a thicker peanut sauce? Add a tablespoon or two of more peanut butter. For a thinner sauce, add a little more coconut milk.
