Tex Mex Chicken Skillet
This skillet meal is packed with flavor and comes together in under 30 minutes. It’s perfect for a busy weeknight dinner.
Ingredients:
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and freshly ground black pepper, to taste
- 1 medium onion, diced
- 1 bell pepper (any color), diced
- 1 jalapeno pepper, seeded and diced (optional)
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro, for garnish (optional)
- Cooked rice, cornbread, or tortillas, for serving
Cooking Guide:
- Heat olive oil in a large skillet over medium-high heat. Season chicken with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add chicken to the pan and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken from the pan and set aside.
- Reduce heat to medium and add the onion, bell pepper, and jalapeno (if using) to the pan. Cook for 5-7 minutes, or until softened.
- Stir in the black beans, diced tomatoes, and chicken broth. Bring to a simmer and cook for 5 minutes, or until heated through.
- Return the cooked chicken to the pan and stir to coat in the sauce.
- Serve immediately over cooked rice, cornbread, or tortillas. Garnish with fresh cilantro (optional).
Tips:
- For a spicier dish, add a pinch of cayenne pepper to the seasoning mix.
- You can substitute ground turkey or ground beef for the chicken.
- Add other vegetables to the skillet, such as corn, zucchini, or chopped green chiles.
- To make this dish ahead of time, cook the chicken and vegetables according to the instructions. Then, store them in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
- Serve this skillet with your favorite toppings, such as shredded cheese, sour cream, avocado, or salsa.
