Ingredients:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 1 jalapeno pepper, seeded and diced (optional)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro, for garnish (optional)
  • Cooked rice, cornbread, or tortillas, for serving

Cooking Guide:

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add chicken to the pan and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken from the pan and set aside.
  2. Reduce heat to medium and add the onion, bell pepper, and jalapeno (if using) to the pan. Cook for 5-7 minutes, or until softened.
  3. Stir in the black beans, diced tomatoes, and chicken broth. Bring to a simmer and cook for 5 minutes, or until heated through.
  4. Return the cooked chicken to the pan and stir to coat in the sauce.
  5. Serve immediately over cooked rice, cornbread, or tortillas. Garnish with fresh cilantro (optional).

Tips:

  • For a spicier dish, add a pinch of cayenne pepper to the seasoning mix.
  • You can substitute ground turkey or ground beef for the chicken.
  • Add other vegetables to the skillet, such as corn, zucchini, or chopped green chiles.
  • To make this dish ahead of time, cook the chicken and vegetables according to the instructions. Then, store them in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
  • Serve this skillet with your favorite toppings, such as shredded cheese, sour cream, avocado, or salsa.
