Stew Beef Recipes Instant Pot From Frozen
Servings: 4-6
Ingredients:
* 1 lb frozen stew beef (such as chuck or round)
* 1 tablespoon olive oil
* 1 onion, diced
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 medium-sized carrots, peeled and sliced
* 2 medium-sized potatoes, peeled and cubed
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the diced onion and cook until translucent, about 3-4 minutes.
2. Add the minced garlic and cook for an additional minute, until fragrant.
3. Add the frozen stew beef, beef broth, red wine (if using), thyme, salt, and pepper. Stir to combine.
4. Add the sliced carrots and cubed potatoes. Stir to combine.
5. Close the lid of the Instant Pot and make sure the valve is set to "Sealing".
6. Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 20 minutes at high pressure.
7. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
8. Open the lid and check the stew beef for tenderness. If it's still frozen in the center, close the lid and cook for an additional 5-10 minutes.
9. Serve hot, garnished with fresh parsley or thyme if desired.
Cook Time: 20 minutes
Prep Time: 10 minutes
Total Time: 30 minutes
Variations:
* To add an Asian twist, add 1/4 cup soy sauce and 2 cloves grated ginger to the stew beef mixture.
* For a spicy kick, add 1-2 diced jalapenos to the stew beef mixture.
* To make a hearty stew with sautéed mushrooms, add 1 cup sliced mushrooms to the sauté step and cook until tender.
* To make a stovetop version, cook the stew beef mixture in a Dutch oven over medium-low heat for 2-3 hours, or until the stew beef is tender.
