Ingredients:

* 2 pounds beef stew meat (such as chuck or round)

* 2 tablespoons all-purpose flour
* 2 tablespoons butter

Instructions:

1. Press the "Saute" button on the Instant Pot and melt the butter. Add the chopped onion and cook until softened, about 3-4 minutes.
2. Add the minced garlic and cook for an additional 1 minute, until fragrant.
3. Add the beef stew meat and cook until browned on all sides, about 5-6 minutes. Remove the browned beef from the pot and set aside.
4. Add the cubed potatoes, sliced carrot, and sliced red bell pepper to the pot. Cook until the vegetables are lightly browned, about 5 minutes.
5. Add the diced tomatoes, beef broth, tomato paste, thyme, salt, and pepper to the pot. Stir to combine.
6. Return the browned beef to the pot and stir to coat with the sauce.
7. Close the lid of the Instant Pot and make sure the valve is set to "Sealing". Press the "Manual" or "Pressure Cook" button and set the cooking time to 30 minutes at high pressure.
8. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
9. Stir in the flour to thicken the sauce.
