    • 3 tablespoons white miso paste
    • 2 tablespoons soy sauce

    • 8 ounces ramen noodles (fresh or dried)
    • 1 protein (cooked and sliced chicken, tofu, or shrimp) – optional
    • 1 cup assorted vegetables (bok choy, mushrooms, bean sprouts, etc.)
    • Scallions, thinly sliced (for garnish)
    • Soft-boiled egg (optional)
    • Spicy chili oil (optional, for extra heat)

Cooking Guide:

  1. Make the Broth: Heat oil in a large pot or Dutch oven. Sauté ginger and garlic until fragrant. Stir in chili bean paste and cook for 30 seconds. Pour in broth, bring to a boil, then reduce heat and simmer for 10 minutes.
  2. Add Miso Paste: In a small bowl, whisk together miso paste, soy sauce, and mirin (if using). Gradually add the mixture to the simmering broth, whisking constantly to dissolve the miso. Do not boil after adding miso.
  3. Cook Noodles & Prepare Toppings: While the broth simmers, cook ramen noodles according to package directions. Prepare your chosen protein and vegetables by cooking them separately until tender.
  4. Assemble & Serve: Divide noodles among serving bowls. Ladle the hot broth over the noodles. Top with protein, vegetables, a soft-boiled egg (if using), and sliced scallions. Drizzle with chili oil for extra heat, and enjoy!
