Slow Cooker BBQ Chicken
This recipe is a breeze to throw together and perfect for a busy weeknight. The slow cooker does all the work, resulting in tender, flavorful BBQ chicken that can be enjoyed in various ways.
Ingredients:
- 3 lbs boneless, skinless chicken breasts (about 5-6 breasts)
- 1 ½ cups BBQ sauce (your favorite brand or a homemade version)
- ½ medium onion, grated (with its juices)
- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce
- 2 tablespoons brown sugar
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
Cooking Guide:
- Combine the BBQ sauce, olive oil, Worcestershire sauce, brown sugar, garlic powder, smoked paprika, salt, and pepper in your slow cooker. Stir well to combine.
- Add the chicken breasts to the slow cooker and turn them to coat them evenly in the sauce.
- Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, or until the chicken is cooked through and shreds easily with two forks.
- Once cooked, remove the chicken from the slow cooker and shred it using two forks on a cutting board.

Tips:
- For thicker sauce: If you prefer a thicker sauce, after shredding the chicken, remove about ½ cup of the sauce to a small saucepan. Simmer the sauce over medium heat until it reduces and thickens to your desired consistency. Then, return the thickened sauce to the slow cooker and toss it with the shredded chicken.
- Chicken thighs: For an even richer flavor, you can substitute boneless, skinless chicken thighs for the chicken breasts. Cooking time will remain similar.
- Serving suggestions: Enjoy your shredded BBQ chicken on hamburger buns for a classic pulled BBQ chicken sandwich. You can also serve it over rice, baked potatoes, or a bed of greens for a more complete meal.
- Leftovers: Leftover BBQ chicken can be stored in an airtight container in the refrigerator for up to 3-4 days. It reheats well and is perfect for quick lunches or easy meal prep.
