Simple Banana Bread Pudding Recipe

Ingredients:

* 3 large ripe bananas, sliced
* 2 cups stale bread, cut into 1-inch cubes
* 1/4 cup granulated sugar
* 1/2 cup brown sugar
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon salt
* 1/2 cup heavy cream
* 2 large eggs
* 2 tablespoons unsalted butter, melted
* 1 teaspoon vanilla extract
* 1/4 cup chopped walnuts (optional)

Instructions:

1. Preheat the oven to 350°F (180°C).
2. In a large skillet, melt the butter over medium heat. Add the sliced bananas and cook for about 2-3 minutes on each side, or until caramelized.
3. In a separate bowl, whisk together the granulated sugar, brown sugar, cinnamon, nutmeg, and salt.
4. In a large mixing bowl, combine the cooked banana slices, bread cubes, sugar mixture, and chopped walnuts (if using). Toss until the bread is evenly coated.
5. In a separate bowl, whisk together the heavy cream, eggs, and vanilla extract.
6. Pour the cream mixture over the bread mixture, and gently fold until the bread is well coated.
7. Pour the mixture into a 9×13-inch baking dish and let it sit for 10-15 minutes to allow the bread to absorb the liquid.
8. Bake for 35-40 minutes, or until the top is golden brown and the pudding is set.
9. Remove from the oven and let it cool for 10-15 minutes before serving.

Cook Time: 35-40 minutes
Prep Time: 20 minutes

Tips and Variations:

* For a chocolatey twist, add 1/2 cup of chocolate chips or 1/4 cup of unsweetened cocoa powder to the bread mixture.
* Substitute the heavy cream with whole milk or a non-dairy milk alternative for a lighter version.
* Add a splash of bourbon or rum to the cream mixture for a grown-up twist.
* Top with a scoop of vanilla ice cream or whipped cream for an extra-special treat.
* Experiment with different spices, such as ground ginger or ground cardamom, to give the pudding a unique flavor.
