This recipe is a fun and healthy take on lettuce wraps, perfect for a light meal or appetizer.
Ingredients:
- For the Shrimp:
- 1 pound medium shrimp, peeled and deveined
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- For the Vegetables:
- 1 head of romaine or butter lettuce leaves, washed and patted dry
- 1 cup shredded red cabbage
- 1 cup julienned carrots
- ½ cup chopped red bell pepper
- ½ cup chopped cucumber
- ¼ cup chopped fresh cilantro
- For the Peanut Sauce:
- ½ cup creamy peanut butter
- ¼ cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sriracha (or chili garlic sauce)
- 1 tablespoon freshly grated ginger
- 1 clove garlic, minced
- 3 tablespoons lime juice
- Water, to desired consistency
- For Serving (optional):
- Chopped peanuts
- Sesame seeds
Cooking Guide:
- Make the Peanut Sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, ginger, garlic, and lime juice. Gradually whisk in water until the sauce reaches a desired consistency, slightly thicker than heavy cream. Set aside.
- Cook the Shrimp: Season shrimp with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the pan and set aside.
- Assemble the Wraps: Arrange lettuce leaves on a large platter. In a separate bowl, toss together shredded cabbage, carrots, red bell pepper, and cucumber. Place a spoonful of the vegetable mixture in each lettuce leaf, followed by a few cooked shrimp. Drizzle with peanut sauce and garnish with chopped cilantro, chopped peanuts, and sesame seeds, if desired.
Tips:
- For extra flavor: Marinate the shrimp in a mixture of soy sauce, lime juice, and minced garlic for 15 minutes before cooking.
- Veggie Variations: Feel free to add other chopped vegetables like broccoli slaw or bean sprouts to the mix.
- Spicy Peanut Sauce: If you like things spicier, add a pinch of red pepper flakes to the peanut sauce.
- Make it ahead: Prepare the peanut sauce and chopped vegetables in advance. Cook the shrimp and assemble the wraps just before serving.
- Leftovers: Leftover peanut sauce can be stored in an airtight container in the refrigerator for up to a week.
