To elevate this dish, we’ll be serving it with a homemade yum yum sauce, a creamy and tangy condiment that perfectly complements the fried rice.

Ingredients:

For the Fried Rice:

  • 2 cups cooked rice (preferably day-old)
  • 1 pound large shrimp, peeled and deveined
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, shredded
  • 2 green onions, chopped
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Vegetable oil

For the Yum Yum Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (or to taste)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • Salt and pepper to taste

Cooking Guide:

  1. Prepare the shrimp: Season shrimp with salt and pepper. Heat a little oil in a skillet and cook shrimp until pink and opaque. Set aside.
  2. Make the fried rice: Heat a large skillet with oil over medium heat. Add onion and garlic, cook until softened. Add carrot and cook for a few minutes.
  3. Create the base: Push the vegetables to the side of the skillet and add beaten eggs. Scramble until cooked. Add cooked rice, soy sauce, oyster sauce, and sesame oil. Stir-fry until well combined and heated through.
  4. Combine: Add the cooked shrimp and green onions to the fried rice. Stir to combine.
  5. Make the yum yum sauce: In a small bowl, whisk together all yum yum sauce ingredients until smooth.

Serve the hot shrimp fried rice topped with a generous drizzle of yum yum sauce.

Tips:

  • Use day-old rice for better texture in your fried rice.
  • For extra flavor, toast the sesame oil before using it.
  • Adjust the spiciness of the yum yum sauce to your preference by adding more or less sriracha.
  • You can customize the vegetables in your fried rice based on your preference.
