Easy Shrimp Fried Rice Recipe

This recipe is for a delicious and quick shrimp fried rice that’s perfect for a weeknight meal.

Ingredients:

  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil
  • 3 large eggs, lightly beaten
  • 4 cups cooked, cold, white rice (preferably day-old)
  • 1 cup frozen peas and carrots, thawed
  • 2-3 green onions, thinly sliced
  • 3 tablespoons low-sodium soy sauce
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Cooking Guide:

  1. Prep the Shrimp: In a bowl, toss the shrimp with salt and pepper.

  2. Cook the Shrimp: Heat a wok or large skillet over medium-high heat. Add the sesame oil and vegetable oil. Once hot, add the shrimp and cook for 1-2 minutes per side, or until pink and opaque. Remove the shrimp from the pan and set aside on a plate.

  3. Scramble the Eggs: Add another tablespoon of oil to the pan if needed. Push any leftover bits of shrimp to one side. Pour the beaten eggs into the empty side of the pan and scramble until cooked through.

  4. Stir-Fry the Vegetables: Push the scrambled eggs to one side of the pan. Add the peas and carrots and cook for 2 minutes, or until softened slightly.

  5. Combine Everything: Add the cooked rice, shrimp, soy sauce, salt, and pepper to the pan. Stir-fry for 2-3 minutes, or until the rice is heated through and everything is well combined.

  6. Garnish and Serve: Garnish with sliced green onions and serve immediately.

Tips:

  • Use cold, cooked rice for best results. Cold rice fries better and prevents the dish from becoming mushy. Leftover rice works perfectly for this recipe. If you don’t have leftover rice, cook fresh rice and spread it out on a baking sheet to cool completely before using.
  • Cook the shrimp and eggs in batches to avoid overcrowding the pan, which can lower the cooking temperature and make the shrimp rubbery.
  • Feel free to add other vegetables you like, such as chopped broccoli, bell peppers, or bean sprouts.
  • Adjust the amount of soy sauce to your taste preference.
  • For a richer flavor, add a teaspoon of oyster sauce along with the soy sauce.
