Shrimp Creole for Meal Prep

Ingredients (serves 4):

- 1 lb medium shrimp, peeled and deveined
- 1 tsp Cajun seasoning
- ½ tsp black pepper

- 1 cup chopped celery (2-3 stalks)
- 1 medium onion, chopped
- 1 green bell pepper, chopped

- 1 (14.5 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 1 cup chicken broth
- 2 bay leaves
- ½ tsp dried thyme
- ¼ tsp cayenne pepper (adjust to spice preference)
- Salt to taste

- 4 cups cooked rice
Cooking Guide:
- Marinate the Shrimp: In a bowl, toss the shrimp with Cajun seasoning and black pepper. Set aside to marinate for 15 minutes (optional, but adds flavor).
- Sauté the Veggies: Heat olive oil in a large pot or Dutch oven over medium heat. Add the celery, onion, and bell pepper. Sauté for 8-10 minutes, or until softened and translucent.
- Build the Sauce: Stir in the diced tomatoes, tomato paste, chicken broth, bay leaves, thyme, and cayenne pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld. Season with salt to taste.
- Add the Shrimp: Reduce heat to low and gently stir in the marinated shrimp. Cook for 3-4 minutes, or until the shrimp are pink and opaque. Be careful not to overcook the shrimp, as they will become tough.
- Portion and Store: Allow the Shrimp Creole to cool slightly. Divide evenly between four separate meal prep containers. Refrigerate for up to 4 days.
