Shrimp Creole for Meal Prep

This flavorful Shrimp Creole is perfect for meal prep as it reheats well throughout the week.

Ingredients (serves 4):

  • Protein:

    • 1 lb medium shrimp, peeled and deveined
    • 1 tsp Cajun seasoning
    • ½ tsp black pepper
  • Veggies (The Holy Trinity):

    • 2 tbsp olive oil
    • 1 cup chopped celery (2-3 stalks)
    • 1 medium onion, chopped
    • 1 green bell pepper, chopped
  • Sauce:

    • 1 (14.5 oz) can diced tomatoes
    • 1 (6 oz) can tomato paste
    • 1 cup chicken broth
    • 2 bay leaves
    • ½ tsp dried thyme
    • ¼ tsp cayenne pepper (adjust to spice preference)
    • Salt to taste
  • To Serve:

    • 4 cups cooked rice

Cooking Guide:

  1. Marinate the Shrimp: In a bowl, toss the shrimp with Cajun seasoning and black pepper. Set aside to marinate for 15 minutes (optional, but adds flavor).
  2. Sauté the Veggies: Heat olive oil in a large pot or Dutch oven over medium heat. Add the celery, onion, and bell pepper. Sauté for 8-10 minutes, or until softened and translucent.
  3. Build the Sauce: Stir in the diced tomatoes, tomato paste, chicken broth, bay leaves, thyme, and cayenne pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld. Season with salt to taste.
  4. Add the Shrimp: Reduce heat to low and gently stir in the marinated shrimp. Cook for 3-4 minutes, or until the shrimp are pink and opaque. Be careful not to overcook the shrimp, as they will become tough.
  5. Portion and Store: Allow the Shrimp Creole to cool slightly. Divide evenly between four separate meal prep containers. Refrigerate for up to 4 days.

Tips:

  • Pre-cook the Rice: To save time on meal prep day, cook a large batch of rice on the weekend and portion it out alongside the Shrimp Creole.
  • Double the Recipe: This recipe easily doubles to feed a crowd or have extra for lunches throughout the week.
  • Spice it Up: For a more intense kick, add a pinch of red pepper flakes or a chopped jalapeno pepper to the sauce while it simmers.
  • Veggie Variations: Feel free to add other vegetables to the pot, such as chopped carrots, zucchini, or okra.
  • Reheating: Gently reheat the Shrimp Creole in a saucepan or microwave until warmed through.
