Sheet Pan Roasted Salmon Broccolini
This recipe is a simple and flavorful way to cook salmon and broccolini on a single sheet pan. It’s perfect for a busy weeknight meal.
Ingredients:
- 2 tablespoons olive oil
- 1 pound broccolini, trimmed and cut into bite-sized pieces
- 4 (6-ounce) salmon fillets, skin-on or skinless
- Kosher salt and freshly ground black pepper, to taste
- 1 lemon, sliced thin (optional)
- 2 cloves garlic, minced (optional)
- 1 tablespoon chopped fresh parsley (optional)
Cooking Guide:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss broccolini with 1 tablespoon olive oil, salt, and pepper. Spread broccolini in an even layer on the prepared baking sheet.
- Pat salmon fillets dry with paper towels. Season both sides with salt and pepper. Place salmon fillets on top of the broccolini.
- (Optional) Arrange lemon slices over the salmon and sprinkle with minced garlic.
- Drizzle the remaining 1 tablespoon olive oil over the salmon and broccolini.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccolini is tender-crisp.

- For extra flavor, marinate the salmon in your favorite marinade for 30 minutes before baking.
- If your broccolini stalks are thick, cut them in half or quarters lengthwise to ensure even cooking.
- Don’t overcrowd the baking sheet. This will prevent the salmon from crisping up properly and the broccolini from roasting evenly.
- Broil the salmon for the last minute of cooking for a crispier skin (if using skin-on fillets). Watch closely to avoid burning.
- Garnish with fresh parsley or another herb of your choice before serving.
