Sausage Cauliflower Fried Rice
This recipe is a delicious and healthy twist on classic fried rice, using cauliflower rice instead of white rice.
Ingredients:
- 1 head cauliflower, riced (or 1 bag frozen riced cauliflower)
- 1 tablespoon olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 4 oz breakfast sausage, diced (or any other kind of sausage you like)
- 2 cloves garlic, minced
- 2 large eggs, beaten
- ⅓ cup low-sodium soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and freshly ground black pepper, to taste
- Chopped green onions, for garnish (optional)
Cooking Guide:
- Rice the cauliflower: If you’re not using pre-riced cauliflower, pulse the florets in a food processor until they resemble rice grains. You can also grate the cauliflower using the coarse grater attachment on a box grater.
- Heat the oil: In a large skillet or wok, heat olive oil over medium-high heat.
- Sauté the aromatics: Add the onion and bell pepper to the pan and cook until softened, about 3-4 minutes.
- Brown the sausage: Add the diced sausage to the pan and cook until browned and cooked through, about 5 minutes.
- Scramble the eggs: Push the sausage mixture to the side of the pan and add the beaten eggs. Scramble the eggs until cooked through, then combine with the sausage mixture.
- Add the cauliflower rice: Add the riced cauliflower to the pan and cook for a few minutes, stirring frequently, until heated through and slightly softened.
- Season and finish: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir fry for another minute or two, until everything is well combined and heated through. Season with salt and freshly ground black pepper to taste.
- Serve: Garnish with chopped green onions (optional) and serve immediately.
Tips:
- For a richer flavor: Use leftover cooked sausage instead of raw sausage for an extra depth of flavor.
- Make it low-carb: If you’re following a low-carb diet, skip the oyster sauce and use a low-carb soy sauce substitute.
- Veggie variations: Feel free to add other vegetables to this recipe, such as chopped broccoli, carrots, or peas.
