Salisbury Steak with Mushroom Gravy
This classic comfort food recipe features savory ground beef patties smothered in a rich mushroom gravy.

For the Steaks:
- 1 pound lean ground beef (85% lean or higher)
- 1/2 cup panko breadcrumbs
- 1/2 onion, finely chopped
- 1 large egg, beaten
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil

For the Gravy:
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 1/2 cup water
- 8 ounces sliced mushrooms
- 2 tablespoons ketchup
- 1 tablespoon soy sauce
- 1/4 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
Cooking Guide:
- Prepare the Steaks: In a large bowl, combine ground beef, panko breadcrumbs, chopped onion, beaten egg, Worcestershire sauce, Dijon mustard, thyme, garlic powder, salt, and pepper. Mix gently with your hands until just combined. Don’t overmix!
- Shape the mixture into 4 equal patties, about 3/4-inch thick.
- Heat olive oil in a large skillet over medium-high heat. Sear the patties for 3-4 minutes per side, or until browned on both sides. Don’t overcrowd the pan, cook the steaks in batches if necessary. Transfer the browned patties to a plate.
- Make the Gravy: In the same skillet (with the drippings), heat butter and olive oil over medium heat. Add the flour and whisk constantly for about 1 minute to cook out the raw flour taste. Slowly whisk in the beef broth and water, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes, or until slightly thickened.
- Stir in the mushrooms, ketchup, soy sauce, and thyme. Season with salt and pepper to taste.
- Return the steaks to the pan with the gravy. Reduce heat to low, cover, and simmer for 5-7 minutes, or until the steaks are cooked through and the gravy has thickened slightly.
Tips:
- For extra flavor, soak the breadcrumbs in a splash of beef broth for a few minutes before adding them to the meat mixture.
- If the gravy seems too thin, whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) and simmer for an additional minute or two.
- You can substitute ground turkey or chicken for the ground beef if desired.
- Serve Salisbury steak with mashed potatoes, roasted vegetables, or rice for a complete and satisfying meal.
