Roasted Salmon with Brussels Sprouts
This recipe is a simple and delicious way to cook salmon and Brussels sprouts on a single sheet pan for easy cleanup.
Ingredients:
- 1 pound Brussels sprouts, trimmed and halved (or quartered if large)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 salmon fillets (skin-on or skinless, about 6 ounces each)
- 2 tablespoons lemon juice (optional)
- 2 tablespoons chopped fresh herbs (optional, such as parsley, dill, or chives)
Cooking Guide:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- Toss the Brussels sprouts with olive oil, salt, and pepper in a large bowl. Spread them out in a single layer on the prepared baking sheet.
- Place the salmon fillets on top of the Brussels sprouts, leaving some space between them. Season the salmon with salt and pepper.
- If using, drizzle the salmon with lemon juice.
- Roast the salmon and Brussels sprouts for 15-20 minutes, or until the salmon is cooked through (flaky with a fork) and the Brussels sprouts are tender-crisp and slightly browned.
Tips:
- For extra flavor, you can marinate the salmon for 15-30 minutes before roasting in a mixture of olive oil, soy sauce, honey, and garlic.
- To test for doneness, gently insert a fork into the thickest part of the salmon. If it flakes easily, it’s cooked through.
- If you prefer crispy Brussels sprouts, roast them for an additional 5-10 minutes after flipping them halfway through cooking.
- For a more decadent dish, melt some butter and drizzle it over the salmon and Brussels sprouts a few minutes before the end of cooking.
- Feel free to add other vegetables to the sheet pan, such as red onion wedges, chopped broccoli, or sliced bell peppers.
- Garnish the finished dish with chopped fresh herbs for a touch of color and flavor.
Enjoy this easy and flavorful roasted salmon with Brussels sprouts!
