Risotto Recipes Sausage Recipe
Servings: 4-6 people
Ingredients:
* 1 cup Arborio rice
* 4 Italian sausage links, casings removed
* 2 tablespoons olive oil
* 1 medium onion, finely chopped
* 2 cloves garlic, minced
* 1 medium carrot, peeled and chopped
* 1 medium celery stalk, chopped
* 1/2 cup white wine (optional)
* 4 cups chicken broth, warmed
* 1/4 cup grated Parmesan cheese
* Salt and pepper, to taste
* Fresh parsley, chopped (optional)
Instructions:
1. Heat the olive oil in a large saucepan over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes.
2. Remove the sausage from the saucepan with a slotted spoon and set aside. Leave the drippings in the saucepan.
3. Add the chopped onion, garlic, carrot, and celery to the saucepan and cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
4. Add the Arborio rice to the saucepan and cook, stirring constantly, for 1-2 minutes. If using wine, add it to the saucepan and cook until the liquid is almost completely absorbed, about 2 minutes.
5. Add 1/2 cup of warmed broth to the saucepan and cook, stirring constantly, until the liquid is mostly absorbed. Repeat this process, adding the broth in 1/2 cup increments, until all the broth is used and the rice is cooked and creamy, about 20-25 minutes.
6. When the rice is cooked, stir in the Parmesan cheese and cooked sausage. Season with salt and pepper to taste.
7. Serve immediately, garnished with chopped parsley if desired.
