Quick Vegan Banana Bread Recipe
Ingredients:
* 3 large ripe bananas, mashed
* 1/2 cup vegan butter or margarine, melted
* 1/2 cup granulated sugar
* 1/4 cup brown sugar
* 1 egg replacement (flaxseed or chia seeds mixed with water)
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1/2 cup chopped walnuts or pecans (optional)
* 1/4 cup chocolate chips (optional)
Instructions:
1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or oil.
2. In a large mixing bowl, combine the mashed bananas, melted butter or margarine, granulated sugar, and brown sugar. Mix well until smooth.
3. Add the egg replacement, baking powder, baking soda, salt, and vanilla extract to the bowl. Mix until well combined.
4. Gradually add the flour to the bowl, stirring until just combined. Do not overmix.
5. If using, add the chopped nuts and chocolate chips to the bowl. Fold them into the batter.
6. Pour the batter into the prepared loaf pan and smooth the top.
