Pulled Chicken Quesadilla Recipe

This delicious recipe combines the flavors of pulled chicken with the convenience of a quesadilla. Here’s what you need to make it:

1. Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large tortillas
  • 2 cups shredded cheese ( Monterey Jack or Cheddar)

2. Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional minute, until fragrant.
  3. Add the chicken breasts to the skillet and cook until browned on all sides and cooked through, about 5-6 minutes.
  4. Remove the chicken from the skillet and shred it into bite-sized pieces. Return the shredded chicken to the skillet and add the barbecue sauce, cumin, paprika, salt, and pepper. Stir to combine.
  5. In a large bowl, combine the shredded cheese and cooked chicken mixture.
  6. Place a large tortilla in the skillet and sprinkle a quarter of the cheese and chicken mixture onto half of the tortilla.
  7. Fold the tortilla in half to enclose the filling. Cook for 2-3 minutes, until the tortilla is crispy and the cheese is melted. Flip and cook for an additional 2-3 minutes, until the other side is also crispy and the cheese is melted.
  8. Repeat with the remaining tortillas and filling.
  9. Cut the quesadillas into wedges and serve with your choice of toppings.
