Pressure Luck Recipes Instant Pot Beef Stew

Servings: 6-8

Total Time: 45 minutes

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

* 2 pounds beef stew meat (such as chuck or round)
* 1 tablespoon olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 2 carrots, peeled and chopped
* 2 potatoes, peeled and chopped
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* 1 bay leaf
* Salt and pepper, to taste
* 2 tablespoons all-purpose flour

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for an additional 1 minute, until fragrant.
3. Add the beef stew meat and cook until browned on all sides, about 5 minutes.
4. Add the chopped carrots and potatoes, beef broth, red wine (if using), thyme, rosemary, and bay leaf. Season with salt and pepper to taste.
5. Close the lid of the Instant Pot and make sure the valve is set to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 25 minutes at high pressure.
6. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
7. Remove the bay leaf and use two forks to shred the beef into bite-sized pieces. Stir in the flour to thicken the stew.
8. Serve hot, garnished with chopped fresh parsley or thyme (optional).

Variations:

* Mushroom Stew: Add 1 cup of sliced mushrooms to the pot along with the onion and garlic.
* Red Wine Reduction: Reduce the beef broth to 1/2 cup and add 1/2 cup of red wine to the pot.
* Spicy Stew: Add 1/2 teaspoon of ground cumin and 1/4 teaspoon of cayenne pepper to the pot for an extra kick.
* Bread and Butter Stew: Add 2 tablespoons of butter to the pot along with the flour to thicken the stew.
* Vegan Stew: Replace the beef with 1 cup of chopped mushrooms or tempeh, and use a vegan broth substitute.
