Recipe: Paleo Sourdough Banana Bread

Ingredients:

* 1 ripe banana, mashed
* 1/2 cup Paleo sourdough starter (see note)
* 1/2 cup coconut sugar
* 1/2 cup almond flour
* 1/4 cup coconut flour
* 1/2 teaspoon salt
* 1/4 teaspoon baking soda
* 1/4 teaspoon ground cinnamon
* 1 large egg
* 1/2 cup melted coconut oil
* 1 teaspoon vanilla extract
* Optional: chopped walnuts or pecans for added crunch

Note: If you don't have a Paleo sourdough starter, you can create one by mixing 1/2 cup of coconut sugar with 1/2 cup of filtered water and letting it ferment for 24-48 hours before using it in the recipe.

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with coconut oil and set it aside.
2. In a large mixing bowl, combine the mashed banana, Paleo sourdough starter, coconut sugar, almond flour, coconut flour, salt, baking soda, and cinnamon. Mix until well combined.
3. Add the egg, melted coconut oil, and vanilla extract to the mixture. Mix until smooth and creamy.
4. Fold in the chopped nuts, if using.
5. Pour the batter into the prepared loaf pan and smooth the top.
6. Bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.
7. Remove the bread from the oven and let it cool on a wire rack for at least 30 minutes before slicing.
