Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 2 cups vegetable broth
- 2 cups penne pasta (or other short pasta)
- 2 cans (5 oz each) tuna in olive oil, drained and flaked
- ½ cup plain Greek yogurt
- 2 tablespoons chopped fresh parsley
- Salt and freshly ground black pepper, to taste
Cooking Guide:
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for another minute.
