Mexican Ground Beef Instant Pot Recipe

Servings: 4-6

Cook Time: 15 minutes

Prep Time: 10 minutes

Total Time: 25 minutes

Ingredients:

* 1 lb Ground Beef
* 1 medium Onion, diced
* 2 cloves Garlic, minced
* 1 packet of Taco Seasoning
* 1 can (14.5 oz) Diced Tomatoes
* 1 can (15 oz) Red Kidney Beans, drained and rinsed
* 1 cup Mexican-Style Rice
* 1 cup Shredded Cheddar Cheese (optional)
* Salt and Pepper, to taste
* Fresh Cilantro, chopped (optional)
* Lime wedges, for serving

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the pot until it reads "HOT".
2. Add the diced onion and cook until translucent, about 3-4 minutes.
3. Add the minced garlic and cook for an additional minute, until fragrant.
4. Add the ground beef, breaking it apart with a spoon as it cooks, until it's fully browned.
5. Add the taco seasoning and stir to combine. Cook for 1-2 minutes, until the flavors are absorbed.
6. Add the diced tomatoes, red kidney beans, and Mexican-Style Rice to the Instant Pot. Stir to combine.
7. Close the lid of the Instant Pot and make sure the valve is set to "SEALING".
8. Press the "Manual" or "Pressure Cook" button and set the cooking time to 5 minutes at HIGH pressure.
9. When the cooking time is up, allow the pressure to release naturally for 5 minutes, then quick-release any remaining pressure.
10. Open the lid and stir in the shredded cheese (if using).
11. Season with salt and pepper to taste.
12. Serve hot, garnished with chopped cilantro and a lime wedge on the side (if desired).

Variations:

* Spicy Version: Add diced jalapeƱos or serrano peppers to the pot for an extra kick.
* Southwestern Version: Replace the Mexican-Style Rice with cooked brown rice and add diced bell peppers, black beans, and chunky salsa.
* Low-Carb Version: Replace the Mexican-Style Rice with cauliflower rice or served with a low-carb alternative, such as a green salad.
