Low Sugar Keto Banana Bread Recipe

Servings: 8-10 slices

Ingredients:

* Moist Ingredients:
+ 3 large ripe bananas, mashed
+ 1/4 cup almond flour
+ 1/4 cup coconut flour
+ 1/2 cup granulated sweetener (such as Swerve or Erythritol)
+ 1/4 cup melted coconut oil
+ 2 large eggs
+ 1 teaspoon vanilla extract
* Crunchy Topping:
+ 1/4 cup chopped walnuts or pecans
+ 1 tablespoon coconut oil
* Optional Add-ins:
+ 1/2 cup dark chocolate chips (at least 85% cocoa)
+ 1/4 cup dried cranberries or cherries
+ 1/4 cup chopped fresh mint leaves

Instructions:

1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with coconut oil.
2. In a large mixing bowl, combine the mashed bananas, almond flour, coconut flour, granulated sweetener, and melted coconut oil. Mix until smooth.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the vanilla extract.
5. If using, add the dark chocolate chips, dried cranberries or cherries, and chopped fresh mint leaves.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. If using, sprinkle the chopped nuts over the top of the batter.
8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
9. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
