Keto Pumpkin Banana Bread Recipe

Ingredients:

* 3 large eggs
* 1/2 cup (110g) unsalted butter, softened
* 1/2 cup (100g) granulated sweetener (such as Swerve or Erythritol)
* 2 cups (250g) almond flour
* 1/2 cup (60g) coconut flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon ground ginger
* 2 ripe bananas, mashed
* 1/4 cup (60g) canned pumpkin puree
* 1/2 cup (60g) chopped walnuts (optional)
* 1 tablespoon vanilla extract

Instructions:

1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with parchment paper.
2. In a large mixing bowl, cream together the eggs and butter until smooth.
3. Add the granulated sweetener, one tablespoon at a time, and mix until well combined.
4. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, salt, cinnamon, nutmeg, and ginger.
5. Gradually add the dry ingredients to the wet ingredients and mix until a smooth batter forms.
6. Fold in the mashed bananas, pumpkin puree, and chopped walnuts (if using).
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean.
