Instant Pot Beef Roast Recipe
Servings: 6-8
Ingredients:
* 3-4 pound beef roast (chuck or round work well)
* 2 tablespoons olive oil
* 1 large onion, chopped
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* 1 bay leaf
* Salt and pepper, to taste
* 2 carrots, peeled and chopped (optional)
* 2 potatoes, peeled and chopped (optional)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the oil until shimmering. Sear the beef roast on all sides until browned, about 2-3 minutes per side. Remove the roast from the pot and set aside.
2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
3. Add the beef broth, red wine (if using), tomato paste, thyme, rosemary, and bay leaf to the pot. Stir to combine, scraping up any browned bits from the bottom of the pot.
4. Return the beef roast to the pot and make sure it's mostly submerged in the liquid. If necessary, you can add a little water to cover the roast.
5. Close the Instant Pot lid and make sure the valve is set to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 90 minutes at high pressure.
6. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
7. Remove the roast from the pot and let it rest for 10-15 minutes before slicing. Strain the cooking liquid and discard the bay leaf. Serve the roast with the flavorful liquid spooned over the top. If using, add chopped carrots and potatoes to the pot and simmer for an additional 15-20 minutes, or until tender.
