Recipe: Instant Pot Japanese Chicken Ramen

Servings: 4-6 people

Ingredients:

* 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
* 2 cups water
* 2 tablespoons soy sauce
* 2 tablespoons sake (Japanese rice wine) or dry white wine
* 2 tablespoons mirin (sweet Japanese cooking wine)
* 1 tablespoon grated ginger
* 2 cloves garlic, minced
* 1/4 cup sliced green onions for garnish
* 1/4 cup sliced mushrooms (such as shiitake or cremini) for garnish
* 1/4 cup cooked egg noodles (such as Hakata or Udon)
* Salt and pepper, to taste
* Sesame seeds and chopped scallions for garnish (optional)

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the pot until it reads "HOT".
2. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
3. Add the water, soy sauce, sake, mirin, ginger, and garlic to the pot. Stir to combine and bring to a boil.
4. Add the browned chicken back to the pot, along with any accumulated juices.
5. Close the lid of the Instant Pot and set the valve to "SEALING". Press the "Manual" or "Pressure Cook" button and set the cooking time to 10 minutes at high pressure.
6. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
7. Open the lid and stir in the cooked egg noodles.
8. Taste and adjust the seasoning with salt and pepper as needed.
9. Ladle the ramen into bowls and garnish with sliced green onions, mushrooms, and a sprinkle of sesame seeds and chopped scallions, if desired.

Cook Time: 10 minutes
Prep Time: 15 minutes

* Substitute chicken broth for some of the water for added depth of flavor.
* Add a tablespoon of sesame oil to the pot for a nutty flavor.
* Use different types of noodles, such as ramen or udon, for a varied texture.
* Add sliced carrots, bok choy, or other vegetables to the pot for added nutrients.
* Use low-sodium soy sauce or omit the sake for a lower-sodium version.
