Miso Ramen Instant Pot Recipe

* 2 cups water

* 1/4 teaspoon ground white pepper
* 1/4 cup sliced scallions, for garnish
* 1/4 cup sliced shiitake mushrooms, for garnish
* 1/4 cup sliced green onions, for garnish
* 2 tablespoons cooked egg noodles (such as udon or soba)
* Salt, to taste

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the sesame oil until shimmering.
2. Add the sliced pork belly or bacon and cook until browned, about 3-4 minutes.
3. Add the grated ginger and minced garlic and cook for an additional minute, until fragrant.
4. Add the chicken or vegetable broth, miso paste, soy sauce, mirin, sake, and white pepper. Stir to combine.
5. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 2-3 minutes.
6. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Manual" or "Pressure Cook" button and set the cooking time to 8 minutes at high pressure.
7. When the cooking time is up, allow the pressure to release naturally for 5 minutes, then quick-release any remaining pressure.
8. Open the lid and add the cooked egg noodles, sliced scallions, and additional salt to taste. Stir to combine.
9. Serve immediately and garnish with additional toppings, if desired.
