Instant Pot Recipes Jambalaya Recipe

Servings: 4-6 people

Ingredients:

* 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
* 1 lb smoked sausage, such as Andouille or kielbasa, sliced
* 1 lb large shrimp, peeled and deveined
* 1 large onion, chopped
* 3 cloves garlic, minced
* 1 large red bell pepper, chopped
* 2 tbsp tomato paste
* 2 cups chicken broth
* 1 tsp dried oregano
* 1 tsp dried thyme
* 1 tsp paprika
* 1/2 tsp cayenne pepper
* 1/2 tsp salt
* 1/4 tsp black pepper
* 2 tbsp chopped fresh parsley
* 2 tbsp chopped scallions (optional)
* Cooked rice, for serving

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the pot until it reads "HOT".
2. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the pot with a slotted spoon and set aside.
3. Add the chopped onion, minced garlic, and chopped red bell pepper to the pot. Cook until the vegetables are tender, about 5 minutes.
4. Add the chicken to the pot and cook until browned on all sides, about 5 minutes.
5. Add the tomato paste, chicken broth, oregano, thyme, paprika, cayenne pepper, salt, and black pepper to the pot. Stir to combine.
6. Add the browned sausage back to the pot, along with the shrimp.
7. Close the lid of the Instant Pot and make sure the valve is set to "SEALING". Press the "Manual" or "Pressure Cook" button and set the cooking time to 10 minutes at high pressure.
8. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
9. Open the lid and stir in the chopped parsley and scallions (if using).
10. Serve the Jambalaya over cooked rice and enjoy!
