Instant Pot Recipes Beef Stew Recipe
Ingredients:
* 2 pounds beef stew meat (such as chuck or round)
* 1 large onion, chopped
* 3 cloves garlic, minced
* 2 medium-sized carrots, peeled and chopped
* 2 medium-sized potatoes, peeled and chopped
* 1 cup all-purpose flour
* 1 teaspoon dried thyme
* 1/2 teaspoon dried rosemary
* 1 bay leaf
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 2 cups beef broth
* 1 cup red wine (optional)
* 2 tablespoons tomato paste
* 2 tablespoons olive oil
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the beef and cook until browned, about 5 minutes. Remove the beef from the pot and set aside.
2. Add the chopped onion to the pot and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
3. Add the chopped carrots and potatoes to the pot, cooking for 2-3 minutes or until they start to soften.
4. Sprinkle the flour, thyme, rosemary, and bay leaf over the vegetables and cook for 1 minute, stirring constantly.
5. Add the browned beef back to the pot, along with the beef broth, red wine (if using), and tomato paste. Stir to combine.
6. Close the lid of the Instant Pot and make sure the valve is set to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
7. When the cooking time is up, allow the pressure to release naturally for 10 minutes before quick-releasing any remaining pressure.
8. Remove the bay leaf and season the stew with salt and pepper to taste.
