Instant Pot Recipes Beef Fajitas Recipe
Servings: 4-6 people
Ingredients:
* 1 lb beef fajita-cut strips (flank steak or skirt steak work well)
* 1 large onion, sliced
* 2 large bell peppers (any color), sliced
* 2 cloves garlic, minced
* 1 tablespoon olive oil
* 1 teaspoon ground cumin
* 1 teaspoon chili powder
* 1/2 teaspoon paprika
* Salt and pepper, to taste
* 8 small flour tortillas
* Optional toppings: avocado, sour cream, shredded cheese, diced tomatoes, cilantro, salsa
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Add the beef strips and cook until browned, about 2-3 minutes. Remove the beef from the pot and set aside.
3. Add the sliced onions and bell peppers to the pot. Cook until they start to soften, about 3-4 minutes.
4. Add the garlic, cumin, chili powder, and paprika to the pot. Cook for 1 minute, stirring constantly.
5. Add the browned beef back to the pot, stirring to combine with the vegetables and spices.
6. Add 1 cup of beef broth to the pot and stir to combine.
7. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Manual" or "Pressure Cook" button and set the cooking time to 10 minutes at high pressure.

9. Open the lid and stir the fajita mixture. Season with salt and pepper to taste.
10. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
11. Assemble the fajitas by placing a portion of the beef and vegetable mixture onto a tortilla and adding your desired toppings.
