Beef Burgandy Recipe in an Instant Pot
Servings: 4-6 people
Ingredients:
* 2 pounds beef stew meat (such as chuck or round)
* 1 large onion, sliced
* 2 cloves garlic, minced
* 1 cup burgundy wine (or substitute with red wine)
* 1 cup beef broth
* 1 tablespoon olive oil
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons tomato paste
* 2 bay leaves
* 2 carrots, peeled and sliced
* 2 potatoes, peeled and cubed
* Fresh parsley, chopped (optional)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the sliced onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for an additional 1 minute, stirring constantly to prevent burning.
3. Add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the browned beef from the pot and set aside.
4. Add the burgundy wine, beef broth, thyme, salt, and pepper to the pot. Stir to deglaze the pot, scraping up any browned bits from the bottom.
5. Add the tomato paste, bay leaves, carrots, and potatoes to the pot. Stir to combine.
6. Return the browned beef to the pot and stir to coat with the sauce.
7. Close the lid of the Instant Pot and make sure the valve is set to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
8. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
9. Remove the pot from the heat and discard the bay leaves. Serve the beef and sauce hot, garnished with chopped parsley if desired.
Cook Time: 30 minutes
Prep Time: 20 minutes
Total Time: 50 minutes
Variations to Try:
* Mushroom Burgandy: Add 1 cup of sliced mushrooms (such as cremini or shiitake) to the pot with the onion and garlic in step 1.
* Red Wine Reduction: Reduce the cooking liquid by cooking the stew on "Saute" mode for an additional 10-15 minutes, or until the sauce has thickened to your liking.
* Braised Short Ribs: Replace the beef stew meat with 2 pounds of beef short ribs. Cook for an additional 10-15 minutes to ensure the ribs are tender.
* Add Some Spice: Add 1/4 teaspoon of ground cumin or paprika to the pot with the spices in step 4 for a smoky flavor.
* Make it a Casserole: Transfer the stew to a baking dish and top with crusty bread or mashed potatoes. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the top is golden brown.
