This casserole is a delicious and budget-friendly meal that’s perfect for a weeknight dinner. It’s packed with flavor and nutrients from the ground beef, cabbage, and melty cheese.

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 8 cups shredded green cabbage
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and freshly ground black pepper, to taste

Cooking Guide:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add onion and garlic to the skillet and cook for 1-2 minutes, or until softened. Stir in thyme, paprika, and cayenne pepper (if using).
  4. Add diced tomatoes with their juices and stir to combine.
  5. Add shredded cabbage to the skillet and stir to coat with the sauce. Season with salt and pepper to taste.
