Hibachi Chicken with Fried Rice
This recipe brings the restaurant-style flavors of hibachi to your home kitchen, featuring tender chicken and savory fried rice.
Ingredients:
- For the Hibachi Chicken:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon cornstarch
- 1/2 teaspoon sesame oil
- 1/2 teaspoon freshly ground ginger
- 1 clove garlic, minced
- 1 tablespoon vegetable oil
- For the Fried Rice:
- 2 tablespoons vegetable oil
- 2 large eggs, beaten
- 1/2 cup frozen peas
- 1/2 cup chopped carrots
- 1/2 cup chopped onion
- 4 cups cooked white rice (cold or day-old is preferred)
- 2 tablespoons soy sauce
- 1 tablespoon butter
Cooking Guide:
- Marinate the Chicken: In a bowl, combine chicken, soy sauce, oyster sauce (if using), cornstarch, sesame oil, ginger, and garlic. Let marinate for at least 15 minutes, or up to 30 minutes for extra flavor.
- Cook the Chicken: Heat vegetable oil in a large skillet or wok over high heat. Add the chicken and cook, stirring frequently, until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- Make the Fried Rice: In the same skillet, heat additional vegetable oil. Add the eggs and scramble until cooked through, about 2 minutes. Push the eggs to the side of the pan.
- Add Vegetables: Add peas, carrots, and onion to the empty side of the pan and cook until softened, about 3-4 minutes. Stir in the cooked rice and soy sauce.
- Combine and Season: Combine the cooked chicken and scrambled eggs with the fried rice mixture. Cook for another 1-2 minutes, stirring constantly, until heated through. Season with additional soy sauce to taste, if desired.
