Healthy Vegan Banana Bread Recipe

Ingredients:

* 3 large ripe bananas, mashed
* 1/2 cup rolled oats
* 1/2 cup almond flour
* 1/2 cup maple syrup
* 1/4 cup coconut sugar
* 1/2 cup unsalted cashew butter
* 1/2 cup non-dairy milk (such as almond or soy milk)
* 1 large egg replacement (such as flax or chia eggs)
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon vanilla extract
* Chopped walnuts or pecans for topping (optional)

Instructions:

1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan with non-stick cooking spray.
2. In a large mixing bowl, combine the mashed bananas, oats, almond flour, maple syrup, coconut sugar, cashew butter, and non-dairy milk. Mix until smooth and creamy.
3. Add the egg replacement, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla extract. Mix until well combined.
4. Pour the batter into the prepared loaf pan and smooth the top.
