Grilled Steak Kebabs

These juicy steak kebabs are a perfect summer grilling recipe. The marinade tenderizes the steak and infuses it with flavor, while the vegetables add a pop of color and freshness.

Ingredients:

  • For the marinade:
    • 1/2 cup olive oil
    • 1/4 cup soy sauce
    • 2 tablespoons Worcestershire sauce
    • 3 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon black pepper
    • Salt to taste
  • For the kebabs:
    • 1 pound flank steak, cut into 1-inch cubes
    • 1 red bell pepper, cut into 1-inch squares
    • 1 green bell pepper, cut into 1-inch squares
    • 1 red onion, cut into 1-inch wedges
    • 1 yellow squash, cut into 1-inch wedges
    • Wooden skewers (soaked in water for at least 30 minutes)

Cooking Guide:

  1. Marinate the steak: In a large bowl, whisk together the olive oil, soy sauce, Worcestershire sauce, garlic, oregano, paprika, and black pepper. Add the steak cubes and toss to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to overnight for the most flavorful steak.
  2. Assemble the kebabs: Thread the steak cubes, bell peppers, onion wedges, and yellow squash wedges onto the soaked wooden skewers, alternating the ingredients for even cooking.
  3. Preheat the grill: Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
  4. Grill the kebabs: Place the kebabs on the preheated grill. Cook for 8-10 minutes per side, or until the steak reaches your desired doneness. Be sure to turn the kebabs frequently to ensure even cooking.
  5. Rest and serve: Once cooked through, remove the kebabs from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat.

  • Use a flank steak or skirt steak for the kebabs. These cuts are tender and flavorful, and they marinate well.
