Grilled Garlic and Herb Shrimp
Fire up the grill for this easy and flavorful recipe for grilled garlic and herb shrimp! Marinated in a simple combination of olive oil, lemon juice, and fresh herbs, these succulent shrimp are perfect for a light summer meal or an impressive appetizer.
Ingredients:
- 1 pound large shrimp, peeled and deveined (tails on or off, depending on preference)
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons minced garlic
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon paprika
- Salt and freshly ground black pepper, to taste
- Optional skewers (for shrimp with tails on)
Cooking Guide:
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper. Add shrimp and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 2 hours, for deeper flavor.
- Preheat your grill to medium-high heat. If using skewers, thread shrimp onto skewers, leaving a little space between each one.
- Grill shrimp for 2-3 minutes per side, or until pink and opaque throughout. Be careful not to overcook, as shrimp can become tough quickly.
- Serve immediately with your favorite dipping sauce, lemon wedges, or a side of rice and grilled vegetables.
Tips:
- For a smoky flavor, soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
- Don’t overcrowd the grill, as this can lead to uneven cooking.
- Want to add a kick? Include a pinch of red pepper flakes to the marinade.
- Leftover grilled shrimp can be enjoyed cold in salads or chopped up for pasta dishes.
