Garlic Herb Sauteed Shrimp and Veggies
This recipe is a flavorful and easy one-pan meal perfect for a weeknight dinner.
Ingredients:
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 pound medium shrimp, peeled and deveined
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 zucchini, cubed
- 1 bell pepper (any color), cubed
- 1/4 cup chopped fresh parsley
- 1 tablespoon lemon juice (optional)
Cooking Guide:
- Heat olive oil in a large skillet over medium heat. Add garlic, oregano, and red pepper flakes (if using) and cook for 30 seconds, until fragrant.
- Add shrimp and cook for 2-3 minutes per side, or until pink and opaque. Season with salt and pepper.
- Remove shrimp from the pan and set aside.
- Add zucchini and bell pepper to the pan and cook for 5-7 minutes, or until tender-crisp.
- Stir in parsley and lemon juice (if using).
- Return shrimp to the pan and toss to coat with the vegetables and herbs.
- Serve immediately over rice or pasta, or enjoy on its own.
Tips:
- For extra flavor, marinate the shrimp in a mixture of olive oil, lemon juice, and Italian seasoning for 15 minutes before cooking.
- If your shrimp are large, you may need to cook them for an additional minute or two per side.
- Don’t overcrowd the pan when cooking the shrimp. This will prevent them from cooking evenly and will make them steam instead of saute. Cook the shrimp in batches if necessary.
- Feel free to add other vegetables to this dish, such as broccoli florets, cherry tomatoes, or mushrooms.
- To make this dish gluten-free, be sure to use gluten-free tamari or soy sauce instead of soy sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
