Garlic Herb Sauteed Shrimp and Veggies

This recipe is a flavorful and easy one-pan meal perfect for a weeknight dinner.

Ingredients:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 pound medium shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 zucchini, cubed
  • 1 bell pepper (any color), cubed
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice (optional)

Cooking Guide:

  1. Heat olive oil in a large skillet over medium heat. Add garlic, oregano, and red pepper flakes (if using) and cook for 30 seconds, until fragrant.
  2. Add shrimp and cook for 2-3 minutes per side, or until pink and opaque. Season with salt and pepper.
  3. Remove shrimp from the pan and set aside.
  4. Add zucchini and bell pepper to the pan and cook for 5-7 minutes, or until tender-crisp.
  5. Stir in parsley and lemon juice (if using).
  6. Return shrimp to the pan and toss to coat with the vegetables and herbs.
  7. Serve immediately over rice or pasta, or enjoy on its own.

Tips:

  • For extra flavor, marinate the shrimp in a mixture of olive oil, lemon juice, and Italian seasoning for 15 minutes before cooking.
  • If your shrimp are large, you may need to cook them for an additional minute or two per side.
  • Don’t overcrowd the pan when cooking the shrimp. This will prevent them from cooking evenly and will make them steam instead of saute. Cook the shrimp in batches if necessary.
  • Feel free to add other vegetables to this dish, such as broccoli florets, cherry tomatoes, or mushrooms.
  • To make this dish gluten-free, be sure to use gluten-free tamari or soy sauce instead of soy sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
