Ingredients:

For the Tomato Soup:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups chicken broth
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream (optional)

For the Grilled Cheese:

  • 4 slices bread
  • 4 slices cheese (your favorite, such as cheddar or mozzarella)
  • Butter

Instructions:

For the Tomato Soup:

  1. Heat olive oil in a medium saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Stir in garlic and cook for 30 seconds more.
  3. Add crushed tomatoes, chicken broth, oregano, salt, and pepper. Bring to a simmer and reduce heat to low. Let simmer for 15-20 minutes for richer flavor.
  4. If desired, stir in heavy cream for a creamier soup.

For the Grilled Cheese:

  1. Butter one side of each bread slice.
  2. Place two slices of bread, buttered side down, in a skillet over medium heat.
  3. Top each with cheese.
  4. Place remaining bread slices, buttered side up, on top of the cheese.
  5. Cook until golden brown and cheese is melted, about 2-3 minutes per side.
