Easy Sugar Free Banana Bread Recipe
Servings: 12 slices
Ingredients:
* 3 large ripe bananas, mashed
* 1/2 cup almond flour
* 1/4 cup coconut flour
* 1/4 cup granulated sweetener (such as Swerve or Erythritol)
* 1/4 cup melted unsalted butter
* 2 large eggs
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon vanilla extract
* 1/2 cup chopped walnuts (optional)
* 1/4 cup chopped pecans (optional)
Instructions:
1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or coconut oil.
2. In a large mixing bowl, combine the mashed bananas, almond flour, coconut flour, granulated sweetener, and melted butter. Mix well until smooth.
3. Add the eggs one at a time, mixing well after each addition.
4. Add the baking soda, salt, and vanilla extract. Mix until combined.
5. If using nuts, fold them into the batter.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
8. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
