Easy Low Sugar Banana Bread Recipe

Ingredients:

* 3 large ripe bananas, mashed
* 1/2 cup (100g) granulated sugar
* 1/2 cup (115g) unsalted butter, softened
* 2 large eggs
* 1 teaspoon vanilla extract
* 2 1/4 cups (285g) all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 cup (60g) chopped walnuts (optional)

Instructions:

1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan and set it aside.
2. In a large mixing bowl, whisk together the mashed bananas, granulated sugar, and softened butter until well combined.
3. Add the eggs one at a time, whisking well after each addition. Whisk in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the banana mixture, whisking until just combined. Do not overmix.
6. Stir in the chopped walnuts, if using.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 55-60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
