Easy Lemon Chicken with Garlic Lemon Sauce
This recipe is perfect for a weeknight meal. It’s simple to prepare, uses pantry staples, and is bursting with bright lemon flavor.
Ingredients:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/4 cup all-purpose flour
- 1 cup chicken broth
- 1/2 cup dry white wine (or additional chicken broth)
- 2 tablespoons lemon juice
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley (optional)
Cooking Guide:
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, oregano, and garlic powder.
- Dredge the chicken in flour, shaking off any excess.
- Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes per side, or until golden brown.
- Transfer the chicken to the prepared baking dish.
- In the same skillet, whisk together chicken broth, white wine (or additional broth), and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the butter and garlic, and cook for another minute.
- Pour the lemon sauce over the chicken in the baking dish.
- Bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Garnish with chopped fresh parsley (optional) and serve immediately.
Tips:
- For thicker sauce, whisk together 1 tablespoon cornstarch and 2 tablespoons cold water to form a slurry. Add the slurry to the pan with the lemon sauce and cook for 1-2 minutes, or until thickened.
- If you don’t have white wine, you can substitute it with an equal amount of chicken broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- This recipe can be easily doubled or tripled to feed a crowd.
- You can use bone-in, skin-on chicken breasts or thighs for a more flavorful dish. Just be sure to adjust the cooking time accordingly. Bone-in chicken will take longer to cook through.
- For a richer sauce, you can use heavy cream instead of butter.
- Serve this dish with rice, pasta, or roasted vegetables.
