Easy Chicken Quesadilla Recipe

Servings: 4-6 people

1. Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 1/2 medium onion, diced
  • 1/2 medium bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large tortillas
  • 2 cups shredded cheese (Cheddar or Monterey Jack work well)
  • Optional toppings: sour cream, salsa, avocado, cilantro

2. Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  2. Add the diced onion and bell pepper to the skillet and cook until they start to soften, about 3-4 minutes. Add the garlic and cook for an additional minute.
  3. Add the cumin, paprika, salt, and pepper to the skillet and stir to combine. Cook for 1 minute.
  4. Add the cooked chicken back into the skillet and stir to combine with the vegetable mixture.
  5. In a large bowl, combine the cooked chicken mixture and shredded cheese.
  6. Place a large tortilla in the skillet and sprinkle a quarter of the chicken and cheese mixture onto half of the tortilla.
  7. Fold the tortilla in half to enclose the filling. Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.
  8. Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.
  9. Repeat with the remaining tortillas and filling.

3. Tips:

  • Use pre-cooked chicken or leftover chicken to make the recipe even easier.
  • Add some diced jalapenos or hot sauce to the chicken mixture for an extra kick of heat.
  • Experiment with different types of cheese, such as Pepper Jack or Colby Jack, for a unique flavor.
  • Let the quesadillas cool for a few minutes before slicing and serving to help the cheese set.
