Easy Beef Chuck Roast Recipes Instant Pot
Ingredients:
* 3-4 pound beef chuck roast
* 2 tablespoons olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 bay leaves
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Add the chopped onion and cook until softened, about 5 minutes.
3. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
4. Add the beef chuck roast and cook on all sides until browned, about 2-3 minutes per side.
5. Add the beef broth, red wine (if using), tomato paste, thyme, salt, and pepper. Stir to combine.
6. Add the bay leaves and ensure the roast is mostly submerged in the liquid. If necessary, add a little more broth or water to cover.
7. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 60-70 minutes at high pressure.
8. Let the pressure release naturally for 10-15 minutes, then quick-release any remaining pressure.
9. Remove the roast from the Instant Pot and let it rest for 10-15 minutes before slicing and serving.
